½ cup packed brown sugar
¼ cup melted butter
2 eggs
¾ cup milk
2 cups flour
2 tsp baking powder
½ tsp salt
- Preheat the oven to 375° F.
- In a large mixing bowl, blend the pumpkin mash, brown sugar, butter, and eggs.
- Add the milk to the pumpkin mixture.
- In a separate bowl, mix the dry ingredients together.
- Add the dry ingredients to the pumpkin mixture, and stir just until combined.
- Spoon the batter into 10-12 muffin cups, and bake for 20 minutes. Serve hot. Makes 10-12 muffins.
